showcooking
Even though it's not 'French', this expression is already widely accepted in France for pretty much the same thing; I think you'll find it hard to find a purely FR term to replace them. Not least because of the exoticism and sexiness of foreign words in the faddish world of gastronomie!

Sadly, none of the French chefs I know have anything to suggest; since the concept is an entirely anglo-saxon one, I doubt Escoffier or les Immortels foresaw this when they were defining the language of cooking!

Note from asker:
Thank you so much - but I'm determined to find a French equivalent :) |

: Un autre anglicisme ?

Yes, but as several of us have tried to point out to Asker, no precise equivalent FR term exists, as there is a lot of 'value' in using an EN term, in just the sam way as FR terms have a great deal more 'cachet' when used in EN

: This term, an obviously too-literal calque of the EN term, seems to me neither accurate nor to convey the right image to a FR mind.

Note from asker:
C'est désolant ! Mais je n'abandonne pas tout espoir. Cherchons encore ! (merci quand même d'avoir répondu :) |

: Yes... and it's not really the same as 'cuisine ouverte' — in our restaurant, we used to do 'frontcooking', but it was actually in the restaurant itself — there was an entirely separate kitchen as well.

: Sadly, I think that better translates 'showcooking' — the element of 'spectacle' is less present in "mere" 'frontcooking'!
