Je cherche une expression française pour ce "concept" qui consiste à cuisiner devant les convives (restaurants japonais, mais aussi dans certaines cantines, etc.). Merci!

Ou "open kitchen" mais j'ai l'impression que le mot "ouvert" est assez souvent utilisé

Depuis moins de dix ans, une tendance venue des Etats-Unis s’est installée aussi en Europe, les « open kitchen », comme on les nomme un peu partout, – les cuisines ouvertes – ont gagné la tendance, celle qui veut que tout restaurant branché ait sa cuisine ouverte vers le client.

neutral Tony M : Yes, but that's not actually quite the same thing: there is still a nuance of a barrier between the dining room and the kitchen, which is almost totally removed in frontcooking. In cantines, it's not 'showcooking', but 'front...' — 'cuisine minute'

Agree, it might be more of a "show" as you point out, but in cantines (as Chiffon suggests), they wouldn't really show-off their cooking skills? Anyway, it's always difficult to be sure without the full context!

showcooking

Even though it's not 'French', this expression is already widely accepted in France for pretty much the same thing; I think you'll find it hard to find a purely FR term to replace them. Not least because of the exoticism and sexiness of foreign words in the faddish world of gastronomie!

Sadly, none of the French chefs I know have anything to suggest; since the concept is an entirely anglo-saxon one, I doubt Escoffier or les Immortels foresaw this when they were defining the language of cooking!

Yes, but as several of us have tried to point out to Asker, no precise equivalent FR term exists, as there is a lot of 'value' in using an EN term, in just the sam way as FR terms have a great deal more 'cachet' when used in EN

C'est la seule alternative que j'ai trouvée à "frontcooking" - le terme anglais est effectivement largement employé en français.

le frontcooking


Je n'ai trouvé que fes sites qui qui conservent frontcooking et aucune traduction . Cuisine ouverte semble un pâle équivalent

Ici on parle de cuisine ouverte étalée devant le convive mais en rajoutant le terme japonais Teppanyakki

agree Tony M : Yes... and it's not really the same as 'cuisine ouverte' — in our restaurant, we used to do 'frontcooking', but it was actually in the restaurant itself — there was an entirely separate kitchen as well.
