Exactly which part of the manual? in some general introduction? or the part about how to communicate with other people while handling explosives?

It makes a huge difference:
to "acknowledge" as part of a communication protocol between people handling explosives can have only one meaning: make sure that when you say anything to someone else, it was heard and understood. ONLY THAT contributes to "fatality prevention"

If it's just about being nice to people you talk to, then all other meanings would make sense (exprimez de l'intérêt, témoignez votre reconnaissance, apprécier, etc etc ) BUT it wouldn't contribute in any way to "fatality prevention";

when you are surrounded by explosives about to be set off, someone talking sympathetically to you is not going to be of much use for "fatality prevention" - OTOH not confusing "you have fifteen seconds to get out" with "fifty seconds to get out" might be more helpful ...

can you give few sentences where "to acknowledge" is used?

(pour ce que vous entendez) il s'agit d'un manuel de formation (du formateur) de type plan de prévention des accidents...et de l'échange formateur-participants..

apprécier pourrait être assez proche du sens anglais, dans le sens de donner acte de ce qui a été dit.

On peut notamment "prendre compte" (ici dans le second cas), reconnaître (avoir pris connaissance de), etc.
